Announcing Cooking Concepts # 10 - Mom’s Recipe

A mother is the truest friend we have, when trials heavy and sudden, fall upon us; when adversity takes the place of prosperity; when friends who rejoice with us in our sunshine desert us; when trouble thickens around us, still will she cling to us, and endeavor by her kind precepts and counsels to dissipate the clouds of darkness, and cause peace to return to our hearts.  ~Washington Irving

As mother’s day falls on 13th may so to make this month a super special to mom’s I decided this month’s concept as “Mom’s Recipe”.

Mommy is the first teacher in everybody's life. She teaches how to eat, talk and everything. And many of you might be same like me who does not set any interest in cooking when you stay with your sweet mom’s. Nevertheless when you start cooking and you stay far from mom then you recollect that entire cooking mom used to do. Mom who gives us the first piece of a sweet/snack and she sees your eyes light up as she cooks. It's Mom who will be the first happy women when you begin your first solo effort in kitchen. Love you Mom!!!!

Kobbari Mamidikaya Pachadi | Coconut Mango Chutney

Kobbari Mamidikaya Pachadi is an Andhra special Pachadi made by blending sweet coconut and sour mango collectively which gives a very unique and scrumptious taste. The spiciness to this chutney is added from chillies and seasoning adds an extra layer of flavor.

Kobbari Mamidikaya Pachadi is one of my most favorite among Chutney’s. My mom used to prepare this chutney surly at the time of ugadi. This is quite simple and easy to prepare. I learnt this recipe from my mom.

Coconut Shrimp with Spicy Tartar Sauce

I and my husband fallen in love with coconut shrimp when we first had it in Hawaii during our vacation. From many days I was just planning to make this yummy appetizer in home but could not make, finally yesterday I got a chance to prepare this crispy, juicy, wonderful coconut shrimp. The final result of this dish was awesome my husband liked the dish the most and he said that it was the finest he has ever tasted.

To prepare this dish I Used Tiger Shrimp, which is perfect for coconut shrimp, usually the Tiger Shrimp that we get in US are less tasteful so to sweeten the shrimp I added sugar to the beaten egg, which is used for dipping the shrimp and coat it well with bread crumbs and coconut flakes mixture.

Muntha Masala | Pidata Kinda Pappu | Puffed Rice Masala | Bhel Masala

Muntha Masala is a delicious Andhra street food and this is my much loved food from childhood.

The street person or the bandiwala place an earthen vessel on hot coal with a stack of maramaralu/puffed rice and prepare this Masala by taking the puffed rice from below the vessel so that the masala food can be prepared by the roasted puffed rice.

So this name comes for this recipe as pidata (vessel) kinda (under) pappu (masala/food).The bandiwala place all the ingredients and he mixes well in a coconut shell with a stick and serves in a newspaper/banana leaf (potlalu) with palm leaf spoon.

I can say that spring is a beautiful season of flowers. Mangoes blossoms rise up on the mango trees. Fresh fruits and vegetables flourish during the spring.\

If we want to increase your idea of seasonal eating, spring is the perfect season to start your diet with springtime fruits and veggies which add most nutritional value.

Now coming to this month’s cooking concept is “Spring Seasonal Food”. Cook anything with fresh veggies, fruits, herbs as main ingredient that you find in Spring Season (that listed in the below list).

The recipes can include any type of the dish from Muffins, Appetizers, Sweets, Desserts, Meals, Curries, Chutney, Tiffins, Snacks, Cakes, Cookies, Beverages…

I will be accommodating only entries which are posted in March and April.
